Born from a 1947 accident in Fukuoka. Pork bones boiled 8-18 hours. Hitoyoshi founders inherited this tradition from Keisuke with a garlic-in-lard Singaporean twist.
Editor's Note
Garlic Tonkotsu is the standout — intoxicating aroma. Broth is richer than Ajisen. Free sprouts are a genuine bonus. Some may detect a fishy undertone. Gyoza are average. Stick to ramen, get garlic, load up on free sprouts.
