Ma Maison — Tiong Bahru Plaza
What's Special
About Ma Maison Tiong Bahru
Level 1 TBP. Warm, homely interior. Open kitchen — watch breading and frying. Family restaurant feel, not a chain feel.
Meticulous process: premium pork → special coarse panko → temperature-controlled clean oil. Cut it: crunch + thin golden crust + pink juicy centre = perfect tonkatsu.
Miyazaki Tonkatsu = 'best in SG' per reviews. Mille Feuille + plum + shiso = unique. Kurobuta = premium. A Japanese diner endorsed it as authentic.

Practical Info
Dietary
Entire menu is pork. Halal at TBP: Pepper Lunch Express, Maki-San. No halal tonkatsu equivalent at TBP.
Tonkatsu Culture
Tonkatsu = Youshoku cornerstone since Meiji era. 'Katsu' = 'win' in Japanese slang. Good-luck meal before exams. Ma Maison's Nagoya roots: home of miso katsu tradition.
Editor's Note
Best dedicated tonkatsu in Tiong Bahru. Miyazaki is exceptional. Mille Feuille is unique. Tonjiru is a serious soup. Service can be distracted at peak. Cutlet portions feel small (but free-flow sides fill you). On a good day: S$25 of pure Japanese comfort.
Your Experience
Arrive
L1 TBP near entrance. Weekday lunch: 5-10 min. Weekend dinner: 15-25 min wait.
Order
You get a mortar with sesame seeds. Grind them yourself. Mix into tonkatsu sauce. Don't skip this ritual — it is part of the experience.
Eat
Cut: crunch + pink centre. Dip in sesame sauce. Refill cabbage, tonjiru, rice 2-3 times. Okawari is expected.
After
Ma Maison café has fruit tarts. Chateraise on same floor for Japanese cakes + ice cream. Perfect light finish after rich tonkatsu.
