Counter seats = front-row sushi show. Watch chefs, ask questions, receive nigiri at optimal moment. Tables are good but less interactive.
Omakase
Ten Omakase: appetiser → chawanmushi → grilled fish → 11pc nigiri (one at a time) → hand roll → miso → dessert. 60-90 min. Ask for sake pairing.

Yong Siak = Tiong Bahru's café heart. Plain Vanilla next door for dessert. Art Deco buildings. Tiong Bahru Market nearby.
Jukusei — Aging Fish
Jukusei = centuries-old Japanese fish aging. Proteins break down into umami amino acids. White fish 3-5 days, tuna 7-14 days. Kyoten revives this Edomae tradition with modern precision.
