As-Is
Pure unagi and rice. Let 125 years of craftsmanship speak.
With Condiments
Add wasabi, green onions, nori. Completely different flavour dimension.
As Ochazuke
Pour dashi broth over the rest. The most comforting way to end.

Founded 1894 in Tsukiji, Tokyo. 125+ years, 20 outlets in Japan, Bib Gourmand. Four-generation tare recipe. Uncompromising Kanto-style: grill, steam, grill again.
Chose Robertson Quay for first overseas in 2018 — strong Japanese expat community. 34 seats. Eels from Japanese-owned Indonesian farm (same as Tokyo supply). Kept alive until prepared fresh each morning.
Kanto method: split from back, grill to render fat, steam (breaks collagen — custard-like texture), grill again with 3 rounds of tare. Result: plumper, softer, more delicate eel that almost jiggles on the rice.
Singapore-exclusive: Seiro Mushi and Mamushi Donburi not available in Japan. Robertson Quay is the only place in the world to experience all three major Japanese unagi styles in one restaurant.

Editor's Note
Hitsumabushi Medium (S$34.80) is the sweet spot. XL (S$77.80) great for groups. Wagyu combo S$42.80 best of both worlds. Seiro Mushi is Singapore-exclusive. Bone Crackers are Robertson Quay's best bar snack. Kanto-style = melt-in-your-mouth tenderness — nothing better in Singapore.
