About Takahashi
Takahashi Singapore is the first international outpost of Sushi Takahashi in Ginza, Tokyo — a restaurant with an 8-month to 1-year waitlist in Japan. The Singapore location is helmed by Chef Rinto Sasagawa, who trained under Chef Jun Takahashi for 8 years.
The interior is one of Singapore's most zen dining spaces. Each diner receives a miniature zen sand garden. There is also a real zen garden with bamboo and a fountain — remarkable for a Singapore restaurant.
The sushi is built on distinctive shari: Hokkaido rice + Yamagata rice, prepared with spring water and seasoned with white and black vinegar. Firmer and chewier than most. Signature courses include the Ankimo (2-week marinated monkfish liver) and Abalone Katsu with uni.

Zen Garden Platter
Opens with a trio of creative starters on a zen platter. Past highlights: crab croquette with truffle, unagi vs anago, Hokkaido seasonal items.
Cooked Courses
Several cooked courses before sushi: Ankimo (2-week aged monkfish liver), Menuke (Hokkaido rock fish), seasonal soups, palate cleanser.
Nigiri Sushi
The nigiri course is where Takahashi shines. Tuna trio served akami → chutoro → otoro. Otoro steamed for maximum creaminess. Closing: Abalone Katsu with uni, Tamago with caramel.
