Waku Ghin is one of Singapore's most celebrated fine dining institutions, helmed by Chef Tetsuya Wakuda — winner of Asia's 50 Best Lifetime Achievement Award and the first non-Japanese person appointed Sake Ambassador by Japan. The name itself reflects the chef's character: 'Waku' means water springing forth, and 'Ghin' is the Japanese word for silver, his favourite colour. Opened in 2010 within The Shoppes at Marina Bay Sands, the 10,000 sq ft space was designed by award-winning Japanese designer Yohei Akao with natural materials and understated luxury throughout. The heart of the experience is the Chef's Table degustation — a multi-course seasonal journey combining Japanese culinary precision with produce sourced from Hokkaido, Okinawa, Shiga, and beyond. Signature dishes such as the marinated Botan shrimp with sea urchin and Oscietra caviar, and the Ohmi wagyu seared for exactly 20 seconds per side, have become legends of Singapore's fine dining scene.

Arrival — The Bar
Guests begin at the atmospheric bar, where the team presents Chef Wakuda's curated sake selection — including exclusive labels bottled specifically for Waku Ghin.
Signature — Botan Shrimp with Uni & Caviar
The dish that made Waku Ghin famous. Marinated Botan shrimp — sweet and yielding — topped with sea urchin and Oscietra caviar. Every spoonful is a study in luxury and restraint.
The Wagyu — Ohmi Beef from Shiga
Japanese Ohmi wagyu from Shiga Prefecture, seared exactly 20 seconds per side and served minimally — fresh wasabi grated tableside, citrus soy, garlic chips. The beef speaks entirely for itself.
Finale — Dessert with the Skyline
Dessert is served in the main dining room, overlooking Marina Bay. As a guest, you leave with the menu as a keepsake — Chef Wakuda's quiet way of saying the meal was worth remembering.

Waku Ghin is not the kind of restaurant you visit on a whim — plan your evening around it. There are two seatings per night, and the second (8:30pm) tends to feel more relaxed. The Chef's Table degustation is the reason to come; the bar menu is excellent for those wanting to experience the space at a lower price point. If you're a sake lover, this is one of the best curated selections in Singapore — ask the team for their exclusive-label recommendations. Bring a jacket, as the dining room is well air-conditioned. Reservations for groups of more than 8 must be arranged directly via email.
