Opening — Seasonal Appetisers
The meal begins with delicate small dishes showcasing the season's finest ingredients — ankimo (monkfish liver), uni, or whatever the chef has selected from Toyosu that morning.
Sashimi — Precision Slicing
Three varieties of seasonal sashimi, each cut to the exact thickness that brings out its character. The fish is purposeful — no decoration, no distraction.
Cooked Courses — Crab Rice & Seasonal Hot Dish
The crab rice with uni and ikura is one of Shoukouwa's most celebrated dishes — sweet crab, creamy sea urchin, and bursting salmon roe layered over perfectly seasoned rice.
Nigiri — Edomae Tradition
A procession of 10–13 nigiri pieces, each presented at the ideal temperature. The squid nigiri — finely scored and finished with a touch of sudachi lime — is a recurring guest favourite.
Finale — Negitoro Taku & Dessert

Shoukouwa is Singapore's most storied sushi counter — and booking well in advance is essential. The intimate counter seats just 8, so availability is tight. For a first visit, the En dinner menu at S$680++ delivers the most complete experience, including the Chef's Special course. If budget is a factor, the Miyabi lunch at S$380++ still showcases the kitchen's craft. Request counter seating if possible — watching the chefs work in silence, with the maître d' filling in the narrative, is part of what makes this place unique. Note that BYO is permitted on Tuesday to Thursday lunches with no corkage fee, which savvy regulars take full advantage of.
