Ginza Sushi Arai has been one of Tokyo's hardest reservations since 2015, claiming the Tabelog Gold Award for six consecutive years. In January 2026, Chef Arai chose Singapore for his first-ever international outpost at Parkroyal Collection Marina Bay.

The Singapore restaurant is a true replica of the Tokyo original. Seafood is flown daily from Toyosu Market via exclusive supplier Yamayuki for tuna. Chef Junpeng Wang leads the counter year-round; he trained directly under Master Chef Arai in Tokyo. Arai himself is in residence July–September annually.

What sets Ginza Sushi Arai apart is the 'okonomi' philosophy — guests have genuine input into their own course. The shari uses a signature white-and-akazu red vinegar blend, and each piece is crafted at a generous size — intentionally, so every guest leaves truly satisfied.

The restaurant is on the 4th floor. Arrive a few minutes early — timing is precise at this level. The Kiso hinoki and Kitayama cedar interior, crafted by Japanese artisans, evokes an immediate sense of a Tokyo sushi-ya. The hinoki counter scent is distinctive.

The Course: Tsumami, Then Nigiri

The course moves from seasonal tsumami (small bites: marinated fish, luxury ingredients) to the nigiri sequence. The shari blends white and red akazu vinegar, temperature-adjusted per fish type. Each nigiri is deliberately large — an Arai signature. Notice how seasoning shifts from delicate white fish to the richest otoro cuts.
