About

Akira Back is the brainchild of Korean-American chef Akira Back, a former professional snowboarder who trained under legendary chef Nobu Matsuhisa before carving out his own culinary identity. The restaurant — with locations in Seoul, Dubai, Bangkok, Washington D.C., and beyond — arrived in Singapore at the JW Marriott Hotel South Beach, bringing with it a cooking philosophy that is Japanese at its technical core but refuses to stay within any single tradition. Seasonal Japanese ingredients meet Korean flavours, South American techniques, and Back's own irreverent energy, resulting in a menu that is simultaneously polished and playful. The AB Tuna Pizza — a Nobu-lineage dish reimagined with yuzu truffle oil and crispy flatbread — has become the restaurant's calling card globally. The room itself is a theatrical space: moody lighting, high ceilings, and enough buzz to suit a celebration as comfortably as a business dinner.

Your Dining Journey

A guide to the full Akira Back experience — Korean-Japanese creativity at JW Marriott.

01

Arrival — Beach Road & the Hotel

Akira Back occupies a polished space within JW Marriott Hotel Singapore South Beach — a building designed by Zaha Hadid's firm. The architecture sets expectations before you reach the restaurant: dramatic, precise, contemporary.

02

Opening — AB Tuna Pizza & Cold Starters

The AB Tuna Pizza is the dish that defines Akira Back globally — a wafer-thin crispy base topped with spicy tuna, jalapeño, and ponzu. Order it as an opener alongside the Wagyu Gyoza. These two dishes alone justify the visit.

03

The Signature — Rock Shrimp Tempura

Chef Back trained under Nobu Matsuhisa, and the Rock Shrimp Tempura bears that DNA — crispy tempura with creamy spicy sauce, a direct nod to the Nobu original. The Korean influence comes through in the bold, unapologetic seasoning.

04

Main Course — Wagyu & Omakase Options

The wagyu selections anchor the main course — served with Korean-inspired accompaniments that distinguish this from a straightforward Japanese steakhouse. The omakase menu is available at dinner and offers the most complete expression of Back's cooking philosophy.

05

Finale — Mochi & Korean-Inspired Desserts

Akira Back's desserts lean playful — house-made mochi, yuzu-inflected ice creams, and sesame-forward sweets that reflect both Japanese precision and Korean warmth. A lighter ending after an intense, flavour-forward meal.

Editor's Note

What to know before you go

The AB Tuna Pizza is the dish that defines this restaurant globally — start with it. The Rock Shrimp Tempura in creamy spicy sauce is another essential order. The bar programme is strong: Japanese whisky highballs and house cocktails pair well with the small plates. If you're coming for dinner, the room fills up quickly on Fridays and Saturdays, so reserve in advance. For a more intimate experience, ask about the chef's table or omakase options when booking.
