About Syun
Syun is the Singapore expression of Shin-Washoku — Chef Hal Yamashita's philosophy that honours traditional Japanese cooking while embracing contemporary techniques. His first restaurant outside Japan.
Recently relocated to Hotel Michael — warm Japandi interior with sushi counter, main dining, and 2 private rooms (7-8 guests each). 50 seats, personal atmosphere.
Menu built on seasonality and premium Japanese produce. Wagyu from 4 prestigious regions. The signature uni-wagyu roll captures everything Shin-Washoku stands for — traditional meets unexpected.
Unique highlight: Yamashita-style Sukiyaki — wagyu dipped in sea urchin instead of raw egg. The uni amplifies the wagyu in a way raw egg never could. Worth the trip to Sentosa alone.

The Japandi Welcome
Push open the wooden door into a calm, Japandi-renovated space. Sushi counter to the left, main dining ahead. Staff greet you with genuine omotenashi warmth.

Start with the Sea Urchin Rolled by Wagyu Beef on its golden spoon — one bite of wagyu, uni, caviar, and yuzu. S$15 and the best money you will spend on Sentosa. This dish is Shin-Washoku in a single bite.
