Motsunabe — Fukuoka's great hotpot tradition — remains rare in Singapore. Goku is one of three serving the real thing. Broth simmered for hours with apple for a brilliant subtle sweetness.
Chef Urayama's unusual journey — from pizza to yakiniku to motsunabe. Brought it to Singapore 2011. 14 years of refinement. Philosophy: authentic Japanese comfort food in a Fukuoka atmosphere.
The motsunabe ritual: bubbling pot, cabbage, chives, tofu, garlic over soft intestines. Add yuzu kosho for citrus-chilli kick. Finish with champon noodles in the remaining broth — the best part for regulars.

Small Plates First
Bonito tataki, squid with salted fish, clam sake soup while motsunabe heats. Order sashimi if hungry. The izakaya way: drink, nibble, talk, repeat.
The Motsunabe
Bubbling miso pot. Soft, custard-like intestines beneath vegetables. Collagen-silky broth. Add yuzu kosho for citrus-chilli contrast. Deeply satisfying: sweet, savoury, silky.
The Shime
Champon noodles in the remaining broth — the 'shime' closing act. Many regulars say this is the best part. Not a drop should go to waste.
