Vegetarian menu: 5-6 options, konbu stock, dedicated fryer, no egg/dairy/onion. Rare care. Buddhist veg OK. Note: sugar and rice wine used.

Stop at the glass. Watch: grind, knead, roll, cut — daily. Most buy pre-made. Shimbashi does all three fresh. The difference separates good from great.
Cold or Hot
Cold: reveals true character. Seiro S$12.80++ purest. Tempura S$27.80++ classic. Hot: Kamo Nanban S$21.90++. Best of both: Duck Tsukemen S$21.80++.
The First Slurp
Bamboo mat, tsuyu, wasabi. Notice: colour, springy drape, nutty aroma. Dip two-thirds. Slurp. Smooth, gentle grit, clean buckwheat. Simplicity that takes years.
Soba-Yu
When done, ask for soba-yu — starchy noodle water. Pour into remaining tsuyu. Warm, milky, buckwheat-flavoured soup. A tradition most don't know. The proper soba ending.
Paragon & Beyond
Bill: S$15-35++. Paragon B1 = soba + shopping. For soba newcomers: cold seiro. For regulars: seasonal specials, soba cha dessert. Not personality-driven izakaya — for that see Cuppage/Orchard Plaza. This is the best soba on Orchard Road.

Caveats: RE&S chain efficiency not indie personality; tempura slightly oily; Paragon premium; crowded lunch; tsuyu salty — save for soba-yu. Different from izakayas: quick, healthy, one craft done well. Most honest Japanese lunch on Orchard Road.
