The Black Arrives
Dark surface = ma-yu. Intense garlic aroma. Sip broth first. Noodles pick up both broth and oil. Eat promptly.

Kumamoto: Hakata's lesser-known cousin. Same tonkotsu base + black garlic oil = smoky, aromatic complexity. Nantsuttei's 7-phase process is authentic.

How to Order Ramen
Choose hard noodles (keep texture longer). Slurp loudly (it's expected). Eat fast (5 min = peak). Finish the broth (highest compliment to the chef).
Nantsuttei tip: S$1 gyoza at lunch is a must. Ask for extra ma-yu if you love garlic. Dragon Ramen warning: don't touch your eyes after — the chilli oil lingers.

Best ramen secret on Orchard. Black garlic broth = outstanding. S$10.80 = one of cheapest on Orchard. Dragon is genuinely spicy. No egg in standard bowl (S$1.50 extra). Compact space. Hard to beat for quality at this price.
