Sit Down, Order Sweet Potato
Rule #1: Order the Sweet Potato immediately. 30-45 min wait. It will be your finale. Meanwhile: sake, miso lettuce starter, and let the staff guide your menu.
The Skewer Procession
Skewers arrive hot, naturally paced. Foie Gras: golden crust, cream inside. Hotate Bacon: scallop, crispy bacon, melted cheese. Tontoro Ringo: pork + apple. You're in a Tokyo izakaya on Cuppage's 4th floor. Both true.
The Seasonal Discoveries
Weekly specials show Kazu's depth: whole Hokkaido uni, seasonal oysters, the legendary S$10 tomato. Ask staff what's special tonight. Come next week: different menu. That's why regulars return for 10-20 years.
The Sweet Potato Arrives
40 minutes later: sweet potato arrives. Golden, caramelised, creamy as custard. Eat with a spoon. Simplest thing on the menu, arguably the best. Bill: S$60-120 for two. Leave Cuppage planning your next visit.

Kazu is Cuppage's anchor — 30 years of consistent quality. Charcoal grilling is excellent. Foie gras, sweet potato, hotate bacon are non-negotiable. Chicken sashimi is rare in Singapore. 4F next to Kemuri — best charcoal corridor in Singapore. Dishes arrive slowly (grilled to order) — enjoy the pace. vs Nanbantei: Kazu has broader range and seasonal surprises. Choose Nanbantei for purity; Kazu for adventure and the sweet potato.
