About The Gyu Bar
The Gyu Bar is a 35-seat wagyu specialist on Stevens Road, opened in 2018 by Chef Tomoo Kimura of the former Michelin-starred Sushi Kimura, F&B entrepreneur Karen Cheng, and investment director Chua Weiling. A Michelin-starred chef's precision applied to wagyu — treating beef with the same respect the best sushi restaurants give to fish.
The wagyu programme sources from 7 prefectures: Sanuki Olive (world's rarest, 1,700 cattle), Ohmi (oldest brand, 400+ years), Wa-Oh (only free-grazing in Japan), Satsuma (Wagyu Olympics 2017 winner), and more. All chilled, never frozen, entire cattle purchased for rare cuts.
Three styles: yakiniku (smokeless grills), shabu-shabu, sukiyaki. The 9-course prefecture journey (S$238++) takes you through 7 regions. Welcome ritual: choose your sake cup from 136 options on the Sake Glass Wall.

The Sake Glass Wall
Before anything, choose your sake cup from 136 unique options on the Wall. Staff pours the day's complimentary sake. This omotenashi ritual sets The Gyu Bar apart immediately.
Tartare & Appetisers
Opens with Kumamoto Wa-Oh tartare in a waffle cone with Hokkaido uni. Then Satsuma chuck rib salad with sesame. Premium beef treated with sushi-chef precision from the first bite.
The Prefecture Journey
Seven breeds, seven prefectures, each in its ideal preparation. Ohmi as tataki, Sanuki Olive as shabu-shabu, Miyazaki on the smokeless grill. Staff guide you through provenance. A cow figurine identifies each cut's origin — educational and delightful.
Rice, Soup & Dessert
Furano wagyu torched, with your choice of chirashi don or chilled Inaniwa udon. Clean clam soup, seasonal fruit. You've eaten from Hokkaido to Kagoshima without leaving Stevens Road.

The Gyu Bar is the most educational wagyu experience in Orchard — 7 prefectures in one meal. The Michelin pedigree of Chef Kimura brings ingredient respect. Smokeless grills work. Honest caveats: not Michelin-starred itself; S$238++ needs 24hr notice; lower-tier menus less distinctive. vs Shatoburian: The Gyu Bar offers breadth (more prefectures), Shatoburian offers depth (single-origin Hida).
