About Apollon & Am-Bar
Apollon is an 8-10 seat counter hidden in Orchard Plaza. Entrance is nondescript — you may circle the building. Like Tokyo's Golden Gai: word of mouth, not signage. Reviews overwhelmingly positive.
Draft sake on tap — 6+ types, unpasteurised nama sake. Rotates seasonally. Novices: sample without committing to bottles. Connoisseurs: curated with care. Every visit offers something new.
Am-Bar (#01-30) is the second chapter — aged sake (koshu) with deep amber, caramel, dried fruit, umami, almost sherry-like. One of Singapore's few serious aged sake collections. Darker, moodier — the contemplative encore.
The food genuinely surprises — signature potato salad is architectural, crab croquettes enormous, chicken liver converts skeptics, karaage rivals Singapore's best. Plus uni omelette, sardine sashimi, oden. Not throwaway bar food — cuisine designed to elevate the sake.

Find the Door
Orchard Plaza, 150 Orchard Road. Building is older, less conspicuous. Unit #01-29 not prominently signed. Adult shops nearby — normal. Find the door, push through. Inside: beautiful 8-10 seat counter, warm light, quiet confidence.
Draft Sake Discovery
Sit at counter. Staff walk you through 6+ draft sakes. Ask for small pours. Guided sake tasting, one glass at a time. Drier unfiltered options have unique complexity. New to sake? Tell staff — they'll build a journey.
Tapas That Surprise
Order the potato salad — trust us. Then crab croquettes, chicken liver, chef's sashimi. Karaage also strong. Each dish creates flavour dialogue with your sake. Not eat-and-drink separately — one integrated experience.
Through the Wall
After draft taps, ask about Am-Bar next door. Atmosphere shifts: darker, quieter. Aged sake (koshu) — years of maturation, golden to amber, caramel, dried fruit, sherry-like. If you thought sake was only clear and light, Am-Bar rewrites everything. One of Singapore's — perhaps Southeast Asia's — few proper aged sake experiences.
Exit into the Night
S$50-70 per person, more with Am-Bar. Back onto Orchard Road. You've just had one of Singapore's most sophisticated sake evenings — in a space smaller than most living rooms, in a building most shoppers don't know exists. This is why Orchard Road is worth exploring beyond department stores.

Apollon is one of Orchard's best sake experiences — draft-on-tap system is rare, food is exceptional bar fare, Am-Bar extends into aged sake. Caveats: hard to find; Orchard Plaza building seedy; 8-10 seats only; non-drinkers excluded; per-glass cost adds up; tapas portions small. For dining-with-sake: Kemuri or Nagomi. For sake-first with exceptional food: Apollon is unmatched in Orchard.
