About EN-biton
EN-biton is one of three EN Group brands at JEM, alongside Aburi-EN and KIWAMI. 'EN' = gathering place, 'Biton' = beautiful pork. JEM outlet opened early 2025.
What separates EN-biton: Kagoshima yuzu pork (fed yuzu citrus — genuinely different fat composition, sweeter, juicier) and Hokkaido Shirabaka pork. Both coated in Saitama panko — the lightest, crispiest in Japan.
JEM outlet is spacious: counter, booth, and table seating. Every katsu set includes free-flow Hokkaido Nanatsuboshi rice, cabbage-arugula salad, and tonjiru.
EN Group at JEM: Aburi-EN (rice bowls), KIWAMI (ramen), EN-biton (tonkatsu) — three distinct Japanese cuisines, one quality standard, all on Level 1.

The Dining Ritual
Grind Sesame Seeds
Grind roasted sesame, add tonkatsu sauce. The nutty aroma transforms the katsu. Traditional Japanese method.
Choose Your Sauce
Three sauces: tonkatsu + sesame (classic), miso (deep umami), oroshi + yuzu ponzu (refreshing). Try one piece with salt only — taste the pork.
Refill Freely
All sets: free-flow Hokkaido rice, cabbage-arugula salad (ponzu or goma), and tonjiru. Refill freely — staff expect it.
Hot Stone Gyukatsu
Wagyu arrives medium-rare. Hot stone arrives. Sear briefly — a few seconds per side. Don't overcook A5 wagyu. Keep hot stone away from kids.

Understanding Tonkatsu
🐷 Tonkatsu 豚カツ
Tonkatsu = breaded deep-fried pork cutlet elevated to art. EN-biton's obsession: specific breeds (yuzu pork, Shirabaka), Saitama panko, precise frying. Japanese philosophy: ingredient quality = dish quality.
Editor's Note
EN-biton fills a real gap in Jurong. Yuzu pork is a genuine differentiator. A5 gyukatsu with hot stone is worth the splurge. Caveats: yuzu premium debatable, Rosu can be fatty, gyukatsu S$43++ excludes rice. Strongest recommendation for unique pork breeds in Jurong. Ma Maison remains great for classic thick-cut Kurobuta.
