Aging Pork: like dry-aged steak applied to pork. Enzymatic breakdown concentrates umami amino acids. Result: more tender, juicy, flavourful cutlets. Extraordinary crispy crust — light, never greasy — pink-tinged, meltingly juicy interior. Tonkatsu at its highest form.
Two cuts: Rosu (loin, with fat rim — indulgent) and Hire (fillet — lean, delicate). Plus Ebi, Chicken, Assorted sets. Every set: refillable rice (white or 10-grain), tonjiru (hearty pork miso), cabbage + sesame dressing, pickles, tea jelly, free green tea.

Tonkatsu evolved from French côtelette during the Meiji era into something uniquely Japanese: thick-cut, panko-breaded, deep-fried pork cutlet with cabbage, rice, miso soup. 'Youshoku' = Japan's 150-year transformation of Western food.
Aging Pork = modern food science meets tradition. Enzymatic breakdown of proteins converts into glutamate (umami). More tender, more complex flavour. Combined with expert panko and precise frying — depth that fresh-cut pork cannot match.

Choose Cut
Rosu (rich) or Hire (lean). 120g or 250g Jumbo. White or 10-grain rice. First-timer? Rosu — the fat rim is where the magic is.
Grind Sesame
Set comes with ceramic mortar + whole sesame seeds. Grind until fragrant, add tonkatsu sauce, mix. Dip katsu. Pour remaining over cabbage. Freshly ground = aromatic magic.
Refill!
Rice, tonjiru, cabbage — all refillable. Tonjiru is a meal in itself. 10-grain rice complements katsu perfectly. Ma Maison never rushes you.
