Jo-ha-kyu progression: seasonal openers, Toyosu sashimi, then nigiri from lean white fish to otoro/uni climax. Chef Masa narrates every course in fluent English — origin, season, technique.
Seafood only — no wagyu, no deviation. Seasonal: spring sakura, summer uni peak, autumn matsutake, winter fugu. Monkfish liver is a standout. S$230++ for 16+ Toyosu courses — competitive with, and more personal than, Michelin-starred sushi restaurants.

Lift to 6F — highest of Cuppage's hidden gems. No signage. Inside: hinoki counter, 8 seats, Chef Masa at work. The fish was in Toyosu this morning. Tonight, in your mouth.
Awakening: Appetisers & Sashimi
Climax: The Nigiri Sequence
Nigiri sequence — the heart. From lean white fish through chutoro to otoro and uni climax. Shari precisely seasoned. Each piece served at the moment of completion. Body-temperature rice, cool fish, soy pre-brushed. Eat immediately. One bite. Perfect.
Resolution: Soup & Dessert
Clean seasonal soup resets. Small dessert closes. Two hours watching one pair of hands turn Toyosu into perfect bites. You walk out into Orchard Road with quiet satisfaction. One person, one counter, the ocean.
