Not trying to be the best — that is Ippudo. Ajisen is the reliable, affordable, consistent choice. Senmiyu adds unique depth. Caveats: can be too salty, fusion flavours less authentic, no free water, portions smaller than expected. Stick to classic tonkotsu or spicy cha shu = no disappointment.
