About

Ippudo (一風堂) was founded in Hakata, Fukuoka in 1985 by ramen maestro Shigemi Kawahara, a two-time winner of the TV Tokyo Ramen King championship. What began as a single counter shop in Fukuoka grew into a global ramen empire now spanning over 250 restaurants across 20 countries. In Singapore, Ippudo operates 13 outlets — from mall food courts to full-service dine-in restaurants — making it one of the most accessible authentic Japanese ramen chains in the city.

The soul of Ippudo is its Hakata-style tonkotsu broth — an 18-hour slow-simmered pork bone stock that achieves a silky, creamy richness without heaviness. Choose between the classic Shiromaru Motoaji (white broth, pure tonkotsu) or the bolder Akamaru Shinaji, elevated with Ippudo's signature miso paste and fragrant garlic oil. Both are served with Ippudo's thin, springy Hakata-style noodles. Customisation is encouraged: adjust richness, noodle firmness, and portion size.

Your Dining Journey

1

Arrive & Queue

No reservations accepted at any outlet. For popular locations like Mandarin Gallery or Raffles City, expect a short queue during peak lunch and dinner hours. Weekday afternoons tend to be much quieter.

2

Choose Your Ramen

First-timers should start with the Shiromaru Motoaji — the purest expression of Ippudo's tonkotsu broth. Go for Akamaru for deeper flavour, or Karaka-Men for spice.

3

Add Sides

The Ippudo Pork Bun is a legendary side — steamed bun with tender chashu. The Hakata-style gyoza with crispy bottom is also a must-order.

4

The Ramen Ritual

When your bowl arrives, mix the toppings and take your first sip before eating. Ask for kaedama (extra noodles) if you finish noodles but have broth remaining.

5

Explore Seasonal Specials

Ippudo regularly rotates seasonal specials. Check the in-store chalk board or Instagram (@ippudosg) for current limited offerings.

Editor's Note

Ippudo is one of those rare chains where quality consistency and accessibility genuinely coexist. The Shiromaru Motoaji is a reliable benchmark for Hakata-style ramen in Singapore — the 18-hour broth is silky without being cloying, the noodles are springy, and portions are generous. The pork bun remains non-negotiable.
