Ippudo (一風堂) was founded in Hakata, Fukuoka in 1985 by ramen maestro Shigemi Kawahara, a two-time winner of the TV Tokyo Ramen King championship. What began as a single counter shop in Fukuoka grew into a global ramen empire now spanning over 250 restaurants across 20 countries. In Singapore, Ippudo operates 13 outlets — from mall food courts to full-service dine-in restaurants — making it one of the most accessible authentic Japanese ramen chains in the city.
The soul of Ippudo is its Hakata-style tonkotsu broth — an 18-hour slow-simmered pork bone stock that achieves a silky, creamy richness without heaviness. Choose between the classic Shiromaru Motoaji (white broth, pure tonkotsu) or the bolder Akamaru Shinaji, elevated with Ippudo's signature miso paste and fragrant garlic oil.
