Hakata Ikkousha
Highlights
About
Hakata Ikkousha (博多一幸舎) was founded in 2004 in the Hakata district of Fukuoka by Mr. Yoshimura, a ramen craftsman driven by the relentless pursuit of the most desirable bowl of tonkotsu ramen. In the ramen capital of Japan, where competition is fierce and standards are unforgiving, Ikkousha earned its reputation through one thing: an uncompromising commitment to authentic Hakata-style tonkotsu broth.
The hallmark of Ikkousha's ramen is the foaming broth — thick, creamy pork bone stock simmered for over 12 hours until it develops the characteristic bubbles that signal true, slowly-extracted tonkotsu. This foam cannot be faked or rushed. In Singapore, the noodles are handmade and the recipe is adjusted for the local climate to maintain the texture found in the Fukuoka original. Ikkousha operates 2 locations — Tanjong Pagar Plaza and CHIJMES — both within easy reach of the CBD.

Your Dining Journey
Choose Your Location
Tanjong Pagar Plaza is the original Singapore spot — compact, popular with the CBD crowd. CHIJMES offers a more atmospheric setting near City Hall MRT.
Customise Your Bowl
Specify noodle firmness (firm/kata recommended), broth richness, and oil level. First-timers — start with Tonkotsu Standard at default settings.
Help Yourself to Free Extras
Help yourself to free boiled eggs and karashi takana (spicy pickled mustard greens) at the counter. The karashi takana is a true Hakata tradition — tangy, mildly spicy, and perfect with rich broth.
Look for the Foam
When your bowl arrives, appreciate the distinctive foaming surface — the signature of 12+ hour tonkotsu. Stir gently, sip, then slurp. Ask for kaedama if you finish noodles but have broth left.
Explore the Variations
Once you've tried the standard, explore: Black adds garlic depth, God Fire brings escalating heat, and Shio offers a lighter alternative. Same base broth — always Ikkousha quality.

Editor's Note
Hakata Ikkousha is, in our view, one of the most authentic Hakata-style tonkotsu ramen experiences available in Singapore. The foaming broth is the real thing — not a shortcut, not a simulation, but the product of genuine long-simmered pork bones handled with care. At S$14.50 for the Standard, it's remarkably well-priced for the quality. The free boiled eggs and karashi takana are a generous touch that reflects the Hakata ramen shop tradition. If you want to understand what real Hakata tonkotsu tastes like without flying to Fukuoka, Ikkousha is where we'd send you.
