Hakata Ikkousha (博多一幸舎) was founded in 2004 in the Hakata district of Fukuoka by Mr. Yoshimura, a ramen craftsman driven by the relentless pursuit of the most desirable bowl of tonkotsu ramen. In the ramen capital of Japan, where competition is fierce and standards are unforgiving, Ikkousha earned its reputation through one thing: an uncompromising commitment to authentic Hakata-style tonkotsu broth.

The hallmark of Ikkousha's ramen is the foaming broth — thick, creamy pork bone stock simmered for over 12 hours until it develops the characteristic bubbles that signal true, slowly-extracted tonkotsu. This foam cannot be faked or rushed. In Singapore, the noodles are handmade and the recipe is adjusted for the local climate to maintain the texture found in the Fukuoka original. What separates Hakata Ikkousha from most tonkotsu chains is time. Their pork bone broth is simmered for a minimum of 18 hours — nearly a full day of continuous cooking at rolling boil. This extreme extraction draws out every molecule of collagen, marrow, and flavour from the bones, producing a broth so thick and creamy it coats the back of a spoon.
