About sio pasta

sio pasta is the casual offshoot of Tokyo's Michelin-recognized sio Aoyama (6 consecutive years in the Guide, 1 star in 2023). Same philosophy, everyday prices from S$13.80. First outlet outside Japan.

Chef Shusaku Toba started cooking at 31 after J-League football and teaching. Trained at Florilège and Aria di Tacubo. His 'Italian of points' philosophy: precision, restraint, clarity.

Partnered with J.A.P Dining Concepts (Sushidan, Pizza Studio Tamaki, Yappari Steak). 28 seats. Toba visits every 2 months year one. Second outlet planned.

Not sio Aoyama transplanted. A casual counter pasta bar — 28 seats, in and out in 30-40 minutes. Think ramen counter, not fine dining.

Mentaiko, salted kelp, white miso — folded into Italian bases. Clean, balanced, not heavy fusion.
