Saboten's flagship SG location. Level 2, Nihon Food Street. Open kitchen visible through glass. ~40-50 seats. Popular with CBD crowd at lunch.
Est. 1966 Shinjuku. 500+ shops. SG is direct-managed (not franchise). Premium pork, Uonuma Koshihikari rice, house-made breadcrumbs. Proprietary tonkatsu sauce.
The free-flow cabbage is a highlight — ice-cold, crisp, with yuzu and sesame dressings. Staff refill proactively. The cold crunch between bites of hot katsu completes the experience.
Compass Verdict
The Millenia Walk Saboten — same gold-standard tonkatsu, slightly less crowded than the main CBD outlet. Worth the short walk from Suntec.

Grind the roasted sesame yourself. Mix into the tonkatsu sauce. The freshly ground sesame genuinely enhances the flavour.
Start with the Cabbage
Don't skip the cabbage. Ice-cold, crisp, with yuzu and sesame. Eat before the katsu. Staff refill without asking.
The Katsu Itself
Loin katsu: thick, juicy. Tenderloin: leaner, tender. Both golden-brown, audibly crispy. Key test: it should NOT taste oily.
