Order the Truffle Shoyu Soba
The Michelin star dish. Sip broth alone first — clam sweetness, then truffle, then pork depth. This complexity is what sets it apart.
Eat Slowly
Unlike tonkotsu, this rewards patience. Truffle intensifies as bowl cools. Noodles carry the delicate broth. Take your time.

100AM's Ura Hototogisu has oyster ramen — oyster paste, oil, genmai cha broth. Same brand, totally different bowl.

Most interesting ramen in CBD. Michelin star from Tokyo (note distinction). Honest: weekday lunch-dinner gap, tight seats, ~S$17-19 per bowl. Contains shellfish. For tonkotsu purists: this is a revelation.
