Bread sushi concept first appeared at Small's 2022. The name captures the philosophy: no bones, no boundaries. Rice replaced by bread with balsamic. Fish remains seriously sourced.
Debut doughmakase: 3 appetisers then bread courses. Each uses different bread sections. Finale: Awaji wakame noodles. Dessert: matcha pudding with warabi jelly.
