About Jellyfish Sushi

Opened January 2026 as Bjorn Shen's third concept at New Bahru. Channels creative energy into a focused lane: sushi reimagined through bread.

Bread sushi concept first appeared at Small's 2022. The name captures the philosophy: no bones, no boundaries. Rice replaced by bread with balsamic. Fish remains seriously sourced.

Debut doughmakase: 3 appetisers then bread courses. Each uses different bread sections. Finale: Awaji wakame noodles. Dessert: matcha pudding with warabi jelly.

Not for everyone — and that is the point. Bread sushi sounds gimmicky but works. Fish quality never compromised. S$165++ is fair. Book early seating for daylight. Come with an open mind — this sushi has no bones.

Each bread section provides different texture. Courses escalate in richness. Vinegar-brushed bread lifts the fish in unexpected ways.

The Wakame Finale

Final course: no bread. Awaji wakame noodles with two dips. Pure Japanese technique. Chef knows exactly what he is doing. Dessert: matcha pudding, warabi jelly, Okinawa black sugar.
