Chef Akimitsu: 18yo apprentice at 131-year-old Samurai-era tendon shop. 5th gen successor. Own restaurant in Asakusa (where tendon was invented). 5x gold. His recipes = DNA of every Tokyo Shokudo dish.

Understanding Tendon
🍤 Tendon: The Art of Tempura on Rice
Tendon born in Asakusa, Edo period. Simple but execution matters: light crispy batter, precise oil temp, balanced tare sauce. Chef Akimitsu refined this for decades at 131-year-old institution. 5 gold medals. The Signature Tendon = echoes of Asakusa tradition, halal-adapted.

Fills genuine halal gap. Tendon is the star (Chef Akimitsu's technique is real). Yuzu Scallop Ramen = standout. Tsukemen = rare halal. S$9.90 lunch = outstanding. Caveats: portions vs menu photos disappoint, inconsistent service, cleanliness issues reported, noodles sometimes doughy, Tom Yam base divisive. For halal ramen/tendon: #1 in Tampines and arguably all East SG. Order Tendon + Yuzu Scallop. Manage portion expectations. One final note: if visiting with non-Muslim friends who want sushi, Itacho Sushi and Genki Sushi are on the same Level 4 and Level 3 respectively — your group can split up and reconvene at the Tampines Mall atrium afterwards.
