Sage by Yasunori Doi is a one-man operation. Chef Doi cooks every dish, bakes all bread, prepares every dessert, and serves each plate. One chef, total creative control, absolute dedication.
The cuisine is French — cherry blossom trout, cheese-crusted turbot with Kyoto leeks, A4 wagyu with Madeira-truffle-foie gras. Menu changes every 2 months. At lunch: legendary wagyu curry rice.
Regular diners describe Chef Doi as passionate, warm, generous, and funny. He sends every guest home with freshly baked sourdough. The one-man format creates extraordinary intimacy — there is nothing else like it in Singapore.

The Wooden Door
Find the wooden door with the wreath. Step inside: 8 counter seats, one open kitchen, Chef Doi already at work. You are entering a craftsman's workshop.
Bread & Amuse-Bouche
Handmade focaccia with moromi miso butter. Amuse-bouche: Parma ham, wagyu tartare, satoimo mousse with uni. Each by one pair of hands. You understand why only 10 seats.
Fish & Main
Fish course: Japanese seasonal through French technique. Main: A4 wagyu with Madeira-truffle-foie gras, sous-vide since you arrived. Chef Doi may offer his famous curry rice. Say yes.
Dessert & The Sourdough Gift
Valrhona chocolate yokan with marron glacé ice cream. As you leave, Chef Doi hands you freshly baked sourdough — a parting gift. You walk onto Orchard Road carrying bread made by the hands that cooked your entire meal. That's Sage.

Sage is one of the most distinctive restaurants on Orchard Road. The one-man format is genuinely extraordinary. S$208++ is fantastic value for this quality of French fine dining.
