About Mare Hachikyo

Mare Hachikyo is the first overseas from Sapporo's Hachikyo Group, in the former Michelin-starred Sushi Kimura space. 90% Hokkaido ingredients — Singapore's highest. Even the cooking water is from Hokkaido.

Hachikyo Group invented Tsukko Meshi 20 years ago — overflowing ikura with 'Oisa!' cheers. Copied worldwide, but this is where it was born. If you can't finish, a donation is requested to honour the fishermen.

Kappo omakase with minimal intervention. Signature Temaki opens (kegani, uni, ikura). Donabe 3 ways like hitsumabushi. 12-seat zen counter + 2 private rooms.

Signature Temaki: kegani, ikura, uni on binchotan-toasted seaweed with Yumepirika rice. One bite and you taste Hokkaido.

Sashimi quartet with individual condiments. Kinki soup in a tied bag. Hotate kakiage crowned with ikura.

The Donabe & Tsukko Meshi

The climax: Donabe with snow crab and trout. First plain, then Tsukko Meshi with overflowing ikura ('Oisa!'), then ochazuke. Three ways. One bowl. Twenty years of tradition.
