About

Barrel Story of Hibiki is a landmark opening in Singapore's dining calendar. Launched in December 2025 by the House of Suntory, it marks the first time the Hibiki whisky brand has anchored a restaurant concept outside of Japan. The venue occupies the ground floor of The Quadrant, a 1920s Art Deco heritage building on Cecil Street previously known as The Black Swan and Rosemead.

The kitchen is helmed by chef-partner Sho Naganuma — co-owner of Torasho Ramen & Charcoal Bar — whose cooking philosophy centres on wood, flame, and time: the same elements that define Hibiki whisky. The menu is modern izakaya-style with 60+ dishes for sharing. Barrel is the only venue in Singapore where Hibiki by the glass is available at a refined price point.

Barrel offers four zones. The main dining room (83 seats) has counter seats facing the wood-fire station. The outdoor terrace is ideal for evening highballs. The Vault — 8-seat whisky salon in a former bank vault — is bookable for private tastings.

Start with the Story of Hibiki flight (S$38): the same whisky served as Highball, On the Rocks, and Mizuwari — revealing three completely different characters.

Signature Set or À la Carte?

For first visits, the Dinner Signature Set (S$68pp) is the most efficient way to sample Barrel's range. The 60-dish à la carte is for explorers.

The Barrel Chicken Rice (S$46) is the most talked-about dish. Free-range French poulet, Hibiki oyster sauce, Oscietra caviar, and chicken-fat rice. Non-negotiable.

For special occasions, enquire about The Vault — an 8-seat private session in the original bank vault. Whisky flights extend to The Ultimate Flight (S$188) or the BARREL (S$988) with 30-year expressions.

Barrel is a genuinely exciting addition to Singapore's CBD scene. Chef Naganuma's kitchen delivers real substance, the wood-fire cooking is confident, and the Hibiki pairing lens adds coherence across the meal. The whisky programme — particularly Hibiki by the glass at a civilised price — is the most compelling in Singapore. First recommendation for post-work whisky dining around Raffles Place.
