This CHIJMES location is the ONLY Singapore outlet serving the original Michelin-starred recipe: hamaguri clam + pork bone + truffle. The other two outlets serve different (oyster) menus.
The broth: hamaguri clam clarity + pork bone richness + truffle aroma. Lighter, more refined, more complex than any tonkotsu. This precision earned the Michelin star — one of only 3 ramen stars in Tokyo.

Chef Yamamoto trained in French and Italian technique. Hamaguri broth uses consommé-level temperature control. Japanese ingredients + European technique = nothing else like it.

The Shio Soba (~S$16.90++) — the Michelin-starred recipe. Clear golden broth, truffle sheen. First sip is a revelation. Clam sweetness → pork depth → truffle finish. Do not order anything else.

CHIJMES Hototogisu: one of Singapore's most important ramen restaurants. The Shio Soba is a must-try. Clam+truffle broth unlike anything else in the city. ~S$17++ is remarkable value for Michelin pedigree. Honest downsides: JFH-managed not chef-owned, limited menu, small space. If you visit only one Hototogisu, make it CHIJMES.
